Actually quite a lot of possible paths here.

For Ferocity tree, you can do either Tier 1 depending if you want attack speed or the ability damage.
Any of the Tier 2 also works, a small auto attack trade bonus vs safer laning phase (+20 hp/30s for minion kill) vs 3% extra damage in a team fight if you can hit anyone.
Tier 3 I think Natural Talent is better here hence the 5 points, but if you want to do a 1-4 split or more points into Vampirism, you can. Up to you.
As Sion my preferred option here is Battle Trance assuming that you can last longer than 5 seconds in a fight (LUL).
Any more points into Ferocity is up to you and your build path. It'll just mean you're aiming to be slightly less tankier.

For the Cunning tree, 5 points in Savagery can help you farm, Secret Stash can help you sustain a bit better, Assassin if 1. you're memeing full AD/Lethality Sion or 2. really want the 2% extra damage bonus in the 1v1 situation.
As for Tier 3, either works, comes down to personal choice of mana problems vs more damage.
For Tier 4, Dangerous Game seems unlikely to help, Bandit would be kinda ok to get some extra gold on the side, and the Gift can help maybe if you can use the bush mechanic often enough.

For the Resolve tree, it's the most likely tree if you're going Tank Sion. Either Tier 1 works, it's life regen vs bonus armor/MR.
For Tier 2, Explorer can work if you roam enough, Siegemaster makes it sound like you need to turtle a lot, Tough Skin just helps you defensively period (Doran Shield bonus?)
For Tier 3, it's Runic Armor hands down for me. One of your sources of damage/tankiness is your W (shield) and you'll want to find a way to increase that source. Also, getting more life regen/healing is quite nice. You could get the flat 50hp bonus if you want, but Sion's W passive is enough to increase my hp as the game goes along in my opinion.
For Tier 4, it again comes down to personal choice, it's nice to have a small buff to your summoner spells (Teleport) which can impact the game sometimes, but the increased life regen on low hp and increased armor/MR for 2 seconds could be argued for depending on your preference and matchup.
Tier 5 also is up to you, Tenacity vs Armor/MR. They're both useful and is personal preference.
Tier 6 is a question mark, I prefer Grasp assuming you're fighting for 4+ seconds (Remember Battle Trance?) to get that extra damage and small heal in a fight, but Colossus on Q and R is ok to get an extra temporary shield. Bond of Stone just doesn't feel better than the other two (feels more like a meme).

So Sion is quite flexible depending on your preference and build path.

Sion can actually choose any of the three basic spells to max first.

Q for max frontal damage.
W for max durability (Shield can also help you win trades, shove lane, etc. Personal favorite).
E <- max E build path is different from this build.

Starting Items

    The usual start for some.
    One of the more popular starts for the E damage + mana regen.
    Solid meme for AD
    Another starting item that some like for the sustain + passive damage

Core Items

    More armor focused build here.
    if you want MR or tenacity more.

Situational Items

    can be substituted in if needed/wanted

Sunfire + Iceborn helps you with waveclear and defence for AD matchups. Also provides solid trade potential.

Visage or Zzrot can be rushed first if against an AP champion or personal preference.
A lot of AD champions used to love rushing crit but now prefers Lethality so Randuin's may be outdated here and possibly a GA is better.
Ninja Tabi is usually the best, but Merc Treads always fits nicely too.
The situational items can provide benefits depending on your matchup and should always be well known.
