Ignite

Ignite gives you some extra burst potential in lane. Imagine true damage, an ax, some auto hits and ignite. It will significantly chunk your opponents health bar.

Ghost

It just works very good with his ultimate. When chasing a low Lee Sin for example, flash as summoner spell won't be enough as he can jump to minions/monsters. Ghost combined with some accurate axes would help you closing the gap and getting the kill.

Flash

I think it's just personal preference what makes you choose flash over ghost for Olaf. When facing a bursty opponent and high cc-jungler you could consider getting flash, as it will be hard to avoid ganks before you're level 6. Get a ward at level 1 if you're not feeling safe with ghost.

Offensive Tree

Get the improved ignite and ghost masterie for more damage and movement speed.
The other points are standard for ad champions. But, I rather prefer the 3% cooldown masterie over the attack speed. Olaf's passive has already an attack speed boost when getting lower on health. However, the cooldown reduction will maybe let you cast one more reckless swing, you knever know bro.

Defensive Tree

Don't got for tenacity in the defensive tree, as your ultimate ignores all crowd control effects. Instead, go for all the resistances, damage reduction and health. Health on Olaf is just incredible I think, as you'll see later. If you're up against a mage in lane, get the flat magic resist masterie and not the armor.

Start off with undertow at level 1. If you're trading early, you'll probably win all the matchups as you can ax them, pick it up, do some auto hits, refresh it's cooldown and ax them again. Olaf is incredibly strong in lane when played well. Try the following: When your opponent steps forward to get his first last hit, throw your ax and hit him once with an auto attack. He will not expect this at all and thus won't hit you (also because he's slowed and can't reach you). In fact, as I found out, this will already scare him off. Max this ability after reckless swing.
Reminder: You should always try to pick up your ax after throwing it!

Take reckless swing at level 2 and max it instead. This spell is wat makes Olaf so strong and at the same time fun to play. Therefore, his build is completely based on this ability. I believe that it's by far the best.
Why maxing his true damage? First of all, this spell is mana-free (costs health). This enables you to spam your true damage all day long. Secondly, the damage of this ability is hard to counter, as it ignores armor wich gives you some advantage in lane. They are forced to stack mass health to be able to compete with you.

Your vicious strikes should be maxed last.

I would start with the flask, 3 potions and ward. Because you will have ghost most of the time as summoner spell (preference), hard cc-junglers en laners can kill you early fairly easy when you're pushing (this will mostly be the case when throwing your ax). Try getting the ward when afraid of early ganks. When you decide to play defensive you can go for the old "cloth 5" combo. Afterwards you can build this cloth armor into your boots.

Core

9 out of 10 games, I'll go for shurelya's - warmogs. It fits incredibly well with his kit.
I would recommend shurelya's reverie on Olaf for 3 reasons. First of all it gives you health and health regen, which is a great compensation for your true damage (that's also the reason why I choose warmogs instead of frozen mallet for example). Secondly it's an amazing gap closer and initiating item, together with your ult and ghost summoner spell. Theoretically you'll get to any target. Last of all, it gives you cooldown reduction. You'll already guess wich ability benefits from this.

You're not obliged to get a brutalizer. But when you do, buy it early. It will help you in lane, raising your killing potential. It also gives some armor penetration and, yes, cooldown reduction. End game, you can sell it for a defensive item, or if you like it you can build it into the black cleaver.

Randuin's omen synergises also very good with Olaf. None of the stats is actually negative for him, it gives you a lot of health and armor + it slows enemies who hit you with standard attacks. In addition, the active will slow them even more. End game you can reach 300 armor when full build. The active slow on randuins omen when cast will be approx. 2 seconds. Not enough? Fine, shurelya's - throw some axes - ghost... Time enough to kill that ad carry.

You probably ony get maw of malmortius when facing double ap. I think it's the number one item to counter them because it gives you magic resist, a shield when reaching a certain amount of health and more attack damage when getting lower on health (scales very good with your attack speed increase passive).

Later on you can sell your brutaliser for spirit visage if you don't feel tanky enough, or rush it insead if you're not feeling comfortable with it. It's actually a pretty decent item now since the season 3 change (but more expensive). It scales well with your "w" as well as with you reckless swing because off the health and cooldown reduction

Situational

If you're planning on rushing a different build, but still want to have some cooldown reduction, you could consider getting ionian boots of lucidity.

Sunfire cape is more of a personal choice. Some players like it more then shurelya's or warmog's. I'ts a good item though, also for Olaf. The aoe passive grants some more damage in teamfights.

Frozen Heart shuts down carries with a lot of attack speed. The cooldown reduction is huge on this item. If you feel like running short on mana or armor, this item is also a good alternative.

When you want more damage I would not try to get bloodthirster or something like that. The only thing you should buy then is atma's impaler, because you're stacking a lot of hp. When you activate your "w" you will have approx. 300-350 ad with this item. If you crit (15% chance, atma's passive) a carry afterwards, you'll do around 500-600 damage. I would sign for that!

Hard

Cho'Gath has a lot of sustain with his passive. Also he counters your reckless swing because off the passive of his ulti (health gain).

Hard

Jayce is a tough opponent to beat in lane. He can harass from a distance with his "Q", he can knock you back, and speed up when changing from melee/range form or running through his acceleration gate.

Kha'Zix

Medium

Has also sustain when using his "W" in melee range. Can jump away and go in stealth multiple times to dodge your axes or reckless swing. You can win vs him because Kha'Zix builds squishy and damage most of the time. Normally he can't burst you down when reaching mid game.

Nidalee

Hard

Ranged auto attacks and a lot of sustain because off her heal. Also very mobile when in tiger form and running into bushes.

Teemo

Hard

Teemo is just a bully in lane when played correctly, he can harass you the whole time from a distance and is hard to catch with his speed buff and shrooms

Yorick

Medium

One of the toughest top laners to beat in general, but I think it's not impossible. He has a lot of sustain but has mana problems early, which has to gave you the advantage.
