12/0/18 is the most standard spread of points to take for olaf, the choices in the ferocity tree are pretty set in stone however in the resolve tree there are a few choices you can make.

Firstly you always want strength of ages, Swiftness and Insight as those are the most important to the way olaf plays (reducing slows and CC without needing to ult is important when using ghost, and lowering ghost cooldown as well as smite cooldown is quite strong as well). However the first 3 tiers can be adjusted to fit each situation, taking runic armor can be stronger if you feel confident in your early game since veteran scars help to give you a bigger early health pool whereas runic armor helps to sustain in late game fights once you have some tank items (a similar argument can be made for Recovery vs. Unyielding).

Olaf's passive gives attack speed based on how much health Olaf is missing so he'll attack faster when he's at low health. Because of this passive, it's actually worth letting yourself get low in the jungle while clearing if you want to clear faster and don't think that you'll be getting in a fight soon.

Olaf's Q makes him throw an axe that goes through units and slows them. It leaves the axe on the ground where it lands and if you pick it up, it reduces the cooldown by 4.5 seconds. Due to the flat reduction on the cooldown, this makes CDR better on Olaf than most champions because with no CDR, his axe will have a 3.5 second CD if you pick it up, but with 40% CDR, it will have a 0.3 second CD if you pick it up. The axe has a minimum throw range of 400 but it stops short if you throw it into a wall so if you get right next to a wall in the jungle, you can spam axes and pick them up right away.

Olaf's W gives him attack speed, lifesteal, and increased healing from all sources when he's low on health. The attack speed and lifesteal help him get through the jungle and the increased healing from all sources makes Olaf extremely scary when he's low health because he gets increased attack speed from his passive and he heals more from this ability so he can sustain for a long time at low hp. The healing from this scales well with Spirit Visage.

Olaf's E deals true damage to a single target and a little bit of damage to himself as well. The self-damage is refunded if you kill a unit with Reckless Swing so it's good for last hitting monsters and minions while farming. The cooldown on this ability is reduced by 1 second every time you auto attack so this scales really well with CDR and attack speed.

Olaf's ultimate gives him passive armor and MR and when he activates it, he loses those stats in return for CC immunity and a lot of AD. Be careful about when you use your ult because it makes you pretty squishy. The ideal time to use it is when you are alone with their carries so you can burn them down quickly without getting killed yourself. You can also use the ult for a quick burst of speed to get deeper into their ranks or as an escape from being caught out because you can break crowd control effects.

Start standard jungling items and then work your way towards Hunters Potion for sustaining your Demanding HP and Mana costs for jungling, then look to finish Ionian Boots of Lucidity quickly (this helps with the cooldown of all of your abilities as well as your ghost which is key for dominating since it is much shorter than the cooldown of flash). After acquiring those early items finish your cinderhulk with the Chilling smite effect which is very helpful for helping olaf's already strong stickyness in fights/skirmishes.

You should look to buy a sightstone to help dominate early vision in order to set up invades and ganks, if you choose not to get sightstone you risk having to use your ghost or ult just to run away from fights which is not what you want to do.

You should always look to cap your CDR (or get as close to the cap of 40% as you can) in order to maximize the effectiveness of your Q as well as ensure your ultimate is up frequently.

Elise likes quick trades with her spell rotation so early game can be risky to approach her without your ult or without support from a laner, her rappel also makes her hard to dive if she counterganks you

Uses ghost slightly better than olaf early and snowballs much harder, his damage and mobility before level 6 can be deadly.

lots of skill in this matchup, he can dodge axes easily but if timed well you can negate his kicks and kill him if you starting winning trades, you also have better 2v2 with most lanes

Nidalee farms well early and tajes quick trades if she ever hits a spear, if you miss your axe you cant stick to her at all and she will just in and out chunking you. However once you get on her with your ghost it is quite easy to stick on her

Rek'Sai cant really trade with you if she takes any extended fights but she can outfarm you heavily forcing you to pressure early or you could see yourself being outscaled

Look to power clear your jungle, Olaf's clear is ridiculously fast so you should to clear as fast as you can and look for potential ganks. Look for overextending enemy laners and try to gank them by repeatedly throwing and catching your axes. In most jungle skirmishes, you should be able to come out ahead but watch out for enemy laners assisting their jungler; try not to invade without winning lanes and retreat from skirmishes in your jungle if enemies are roaming to reinforce their jungler. 

Most importantly when ganking you should look to trade your ghost for enemies flashes whenever possible since lack of flash will make them play more cautiously and helps your laner to be more safe since they get a long window where the enemy cant flash on them or flash with the enemy jungler should the laner get ganked themselves.

Mid Game Back to Top

At this phase in the game, you should be doing 3 things:
 
1. Grouping with your team to take objectives (dragon, buffs, and towers)

2. Power farm your jungle

3. Ganking overextended enemy laners. 

Try to play around your winning lanes and snowball them even further. You can solo dragon but you take a lot of damage so it's better for you to take dragon with your team. Don't be afraid to tower dive for your team, assuming you have a numbers advantage and a few tank items under your belt.

Late Game Back to Top

Late game you should look to control objectives and be a big tank for your team. Your goal is to divert enemy damage away from your backline by forcing the enemy to focus on you when you're diving and on their back line. Mostly spend your time building to counter the other team's damage and look to set up vision for skirmishes and baiting objectives so you can look to run down any squishies that isolate themselves from their teams (especially supports)

Team Fighting Back to Top

During team fights you pretty much want to be diving onto the enemy back line to kill the carries. You want to be repeatedly throwing and picking up your axes and spamming your Reckless Swing (E) on priority targets. Make sure your team is following up if you choose to dive onto the enemy backline; don't go in 1v5... Save your ultimate for when you think you won't be immediately focused and killed, since casting it costs you armor and MR. But you should also be using your ultimate when you foresee a large amount of CC heading your way. 

The main key for succeeding in teamfights with olaf is making sure that your dive into enemy lines is supported by your team moving up with you to take out the displaced targets and to knock down the tanks that are left unprotected as the enemies turn their attention to you, never dive without backup and if you have an ally to dive with you make sure you are going after the same targets since the skills of low health enemies are just as potent as when they are full health.
